Jenna Smith, One of EPLD’s “Good Guys”
Years ago when our kids were preschoolers we decided to take a short vacation. After spending a hot day at the Columbus Zoo, we stopped at a hotel. My husband was busy filling out the paperwork while I watched Chris, then 3, and Kyle, a very busy 1 year old, explore the hotel lobby. A police officer came into the lobby and stood behind my husband, waiting to talk with the desk attendant. Chris had seen the police vehicle pull up in front of the hotel and he watched, fascinated by the officer’s uniform and gun as he stood waiting. Finally, unable to keep quiet any longer, Chris approached the officer and in a loud voice announced, “You don’t need to worry about us, Mr. Policeman. We are the good guys!”
I need to announce (in a similar loud voice) that Jenna Smith, University of Illinois Extension Nutrition and Wellness Educator, is one of EPLD’s good guys. Jenna has been providing excellent programs for EPLD throughout the last year and we are always thrilled when she has something new to come and share here at the Library. Jenna’s programs are full of information about good nutrition and healthy eating tips. Her recipes and suggestions involve easy ways to improve the value of our favorite foods without sacrificing flavor, and Jenna does this all with light-hearted humor, helping us realize we can enjoy our food and a healthier life style at the same time.
Jenna’s next visit to EPLD will be on Thursday, June 21 at 6:30 p.m. when she will be talking about grilling and summer salads. She will provide instruction on safe grilling techniques and foods that work well on the grill, marinating choices, etc. She is also covering ways to use bountiful summer vegetables and fruits in healthy salads on the same evening. And, as always, Jenna brings recipes and tasting samples from her recipes for everyone to enjoy, so you go home with the desire to recreate something yummy! Cost for Thursday evening is only $3 and we still have room available in the class. Why not invite a friend to come with you and make plans to enjoy an evening out? Barbecue Chicken Tacos with Mango Salsa
(Yield: 8 tacos)
1 lb raw boneless skinless chicken breast, cooked and shredded
2/3 cup barbeque sauce
½ cup mango, chopped
½ cup red onion, chopped
2 jalapeno peppers, seeded and finely chopped
¼ cup fresh cilantro, chopped
½ Tablespoon rice vinegar
½ Tablespoon lime juice
8 six-inch white corn tortillas
Place warm, cooked, shredded chicken in a medium mixing bowl. Add barbecue sauce and toss to coat. In a separate bowl, combine mango, red onion, jalapeno peppers, cilantro, vinegar and lime juice; mix well and set aside. Lay tortillas on a microwave-safe plate and heat, about 15 seconds. Evenly distribute barbecue chicken among tortillas; top chicken with mango-onion mixture and serve.
